I got a small buck on 11/21 with my AR-15 using my new EOTech on top. I am still impressed with how the .223 performs on deer (used a 65gr Sierra Gameking). The shot was about 40yrds and left an exit hole that was bigger around then my thumb. The deer went 18yrds and laid down. I had to drag him about 100yrds to the truck but it was quite an ordeal since it was raining really hard and very severe lighting. That soaked deer felt like I was dragging two deer. Nothing like being soaked to the bone having to gut a deer during a bad thunderstorm while only using a headlamp for light. It was worth it and I would do it all again. Hopefully I can get another deer or two this year. I just finished up my processing tonight by making some breakfast sausage and it turned out great.

Well I finally finished grinding up all my hamburger and sausage. I used the grinder attachment on my stand mixer which worked great but took some time since it is not a real high volume grinder attachment. Here is the only pic of my little buck. Not the best pic but I was too tired to try to mess around and take more that night.

That is a nice little deer!!

I envy you that you can use .223 on deer. Here the smallest caliber legal for deer is .243 or larger.

One thing I missed about living in the South was the generous deer limits.

A lot of people down here have their kids or wives use .223 for deer which is great because of its low recoil. My dad was set up about 150yrds away from me and he said the sound from the shot was really quite and almost sounded like a .22 from where he was at. Most counties here you get an opportunity to take 4 whitetail plus a mule deer or two if you are in west TX.

Around here many Southern hunters are not prepared for the distance they might have to shoot to take a trophy.

If you just want something to snack on, then you will do fine with most any rifle, but if you are hoping for a B&C worthy trophy you need to bring something with some legs & punch.

Its big horn season now and most guys are shooting heavy 7mm mags or super 300s.

I did not win a tag this year but I have 9 points now for next year. I sucked this year I did not win any of the raffles. Oh well always next year!

The guys that I hunt with and I went in on a group buy and we bought a commercial meat grinder, meat band saw, and meat mixer.

From Cabela's we bought a vertical plunger style sausage casing filler with a remote control.

If you go in with a group buy and split the cost of the tools you can get some nice tools.

My friends and I formed a group that could be loosely called "preppers" as we have taken steps to ensure that we will be able to feed and protect our families if SHTF.

We group buy tools like this so we can spread the costs out between the 5 of us. We meet in Rich's garage to grind meat and buy our beef direct from the rancher with a handshake deal and cash.

I have never used the Kitchen Aide mixer meat grinder attachment, but my wife would kill me if I destroyed it grinding meat.

I believe a person would be better buying a commercial grade grinder from a supply house (or on line as we did) rather than the over-priced ones made in China like from Cabela's.

We have liked the Cabela's stuffer, but we found it in the Bargain Basement at our local store otherwise might not have bought it.

It must be a Southern thing, but I'm sorry.... shame shame on all of you for ruining good meat by grinding it up. Evil or Very Mad

Steaks, roasts, and ribs is how all game should be processed and it will save you from having to buy fancy contraptions. Any of the "bad" parts that you would normally grind should be cubed for great chili meat, not mixed in with pig fat to make a log. And if its bad enough that you wont eat it, give it to your dog they'll love you for it.

We do cube some like the neck meat, but there is not enough on most of the deer with here to bother with steaks and roasts for the most part.

Our deer are smaller here, and I find taste a little better ground into burger which we use in chili, sloppy joes, etc.

We process our own (non game) meat too, so we could have used the fancy tools. Makes the job easier.

It is also quicker to run it through the grinder rather than cube about 75 pounds of meat per deer. We do make a lot of pepperoni sticks, and summer sausage out of it. We also cram the smokers full.

Since the bag limits of geese here are so generous we have been grinding a lot of goose too.

Yep it is the Kitchen Aid mixer and grinder. It is not high volume so it takes a little while which is fine because I was grinding then vacuum sealing it. Dont worry about messing up the mixer because the Kitchen aides are pretty heavy duty. The one I am using is almost as old as I am.

Gotta be careful that you do not run the meat too fast and heat it up.

If you heat the meat by running the machine too fast you risk contaminating the meat and releasing bacteria.

That is why you should make sure the meat is cool and keep the machinery cool.

A bigger machine that you might run too fast will over heat and contaminate the meat.

I have a commercial grinder as well as a commercial slicer. Dad had aquired them many many years ago.

As far as grinding up deer meat, I personally do not see a problem with it. Just like beef and hogs, if you want a good burger, it has to be ground. I like deer spegetti as well, therefor, the meat has to be ground. BBQ Pulled Deer Meat is another great eat I love.

There is something for everyone. I get all the roast I can, the steaks, ribs, and we also cube for stews and things.
